The Keys of the Mysteries

We made this simple Saison from a base of pilsner malt and spelt. Citra Noble and Saaz hops were added in the kettle, along with a sprinkle of the orange zest we use for our Wit. The star of the show, however, is the yeast. Highly versatile and attenuative, this strain of French origin produces aromas and flavors of pear, citrus, and cracked pepper. Dry, effervescent, and extremely drinkable, this beer offers a refreshing respite from the hop onslaught of the last few weeks.
