Holy Oath of Antioch West Coast IPA
Brewed in collaboration with Solemn Oath Brewery (Chicago, IL). “You must take out the holy tab, count to three—no more, no less—and drink deeply of the sacred IPA.” Our friends from Solemn Oath Brewing came to town to hang out and brew a beer. We knew it had to be a West Coast IPA, and we had a few boxes of Ramosa from our friends at Segal Ranches ready to go. We’ve been loving this hop and experimenting with it over the past few months. A simple malt bill let us saturate the kettle and dry hop with Ramosa and a touch of Simcoe, delivering huge pineapple notes, dank citrus, and righteous tropical excess.
